Slow Food Recommendation

Recommendation

On Friday, 6 December 2013, the Sieraków Manor restaurant received a recommendation from the Slow Food Polska society. This represents a guarantee for clients that the establishment creates dishes from seasonal, regional, fresh and organic produce, prepared according to traditional recipes.

Snail Mark

The Snail Mark, symbol of the Slow Food movement, has been awarded to only 11 restaurants in Poland. The restaurant at Sieraków Manor is the first slow-food establishment in Małopolska. The chef, Janusz Fic pays close attention to the source of the ingredients he uses. The fish come from a nearby reservoir, the meat from the local butcher, and many vegetables and fruit from the surrounding gardens and orchards.

The Slow Food concept and Sieraków Manor

Sieraków Manor fits the Slow Food and Slow Life concepts perfectly. They are concepts that emphasise the importance of locally-sourced produce, the enjoyment of food in harmony with the environment, and the quest for flavours rather than just the satisfaction of hunger. If we are to fully enjoy the pleasures this world can give us, we must dedicate ourselves to a respectful and balanced exchange with nature and the environment.

Gault&Millau two hats recommendation

Recommendation

The Sieraków Manor restaurant has thrice received awards in the prestigious Gault & Millau culinary guide for Poland (2015, 2016 and 2017). The judges awarded the restaurant two hats, which is equivalent to 13 points on a scale of 20. In 2015 and 2016, chef Janusz Fic was nominated Chef of the Year in the Traditional Cuisine category.

The prestige of Gault&Millau

Gault & Millau is a true institution in France. For 40 years, independent, anonymous culinary reviewers have been traversing France and selected countries around the world to find the best recommended restaurants. Poland joined the G & M family in 2015. The guide published for this country was the culmination of several months of efforts by a team of culinary inspectors, who visited and evaluated more than 600 places in Poland and finally selected 246 restaurants, 90 hotels and 40 shopping places and local producers. Of the 246 restaurants mentioned in the guide (2015 edition), 53 restaurants received two hats, three caps were awarded to three, and only one was distinguished by four hats.

Award of Excellence

A title of recognition

The title recognises restaurants that offer high quality wines from leading manufacturers, matched thematically with the menu in terms of both style and price. In addition, the wine list must offer an appropriate number of labels - a minimum of 90. It is also of importance that the wines are presented with full information about vintage, appellations, producers, etc. The judges confer one of three levels of award, starting from the Award of Excellence, followed by the Best Award of Excellence (973 restaurants) and the Grand Award (81 restaurants). Establishments that are honoured with one of these prizes are entitled to use a special logo showing one, two or three glasses - depending on specific distinction.
